If you like chorizo queso with nachos, why not try it on French fries just exactly like cheese fries!
Ingredients-
Main ingredients-
1/4-1/2 lb Chorizo smoked sausage
1 tsp cumin
1/2 tbsp vegetable oil
1 tbsp pickled jalapeños
1 lb frozen French fries
Queso-
2 cups shredded or block pepper Jack
2 cups shredded or block white sharp cheddar
1 can 12 oz evaporated milk
1 tbsp cornstarch
1/2 tsp salt
Servings- 2-4
Prep- 3 minutes
Cooking time- 16 minutes
Directions-
Queso-
On a medium saucepan over medium-low heat, whisk together evaporated milk, cornstarch, & add in salt.
Bring it just to a simmer lightly but don't boil. Stir for 1-2 minutes.
Reduce heat to low & stir in the cheeses & make sure they melt all the way. Sprinkle salt to taste.
Chorizo-
Heat your pan add a little bit of oil on medium heat, over medium heat. Add in the sausage & break them apart. Season with cumin & mix them all together. Add jalapeños & chop them. Cook them until they’re brown.
French fries-
Use any kind of frozen French fries & follow the instructions on the bag & once the fries are done, drizzle the queso over the fries & add the chorizo sausages on top of them.
Note: if using queso again after refrigeration, use a sauce pan & put few spoon full of cheeses & add few tablespoons of water. Stir the cheese until it is smooth.
