This fruit pizza is exactly like any fruit pizza but with more raspberries including raspberry sauce.
Ingredients-
Sauce-
12 oz frozen raspberries
1/4 cup granulated sugar
1/4 cup water
2 tsp cornstarch
1/2 tsp vanilla extract
Main ingredients-
1 refrigerated pillsbury cookie dough roll
1 package 8 oz cream cheese
1/3 cup sugar
1/2 tsp vanilla extract
1 or 2 kiwis peeled, halved & sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 cup fresh strawberries
Directions-
Sauce-
In a saucepan over medium heat, add raspberries, sugar, water, & cornstarch. Stir to combine.
Bring to a boil. Reduce heat to medium-low and gently mash the berries with a spoon as your sauce cooks. Cook sauce for 10-12 minutes, or until raspberries have broken down & sauce looks shiny. Remove from heat, add vanilla extract, & stir to combine.
Baking-
Heat oven to 350°F. Get a 12-inch pizza stone to roll the dough into a pizza pie shape & make sure you dust the roller with flour to roll the dough very easy. Or spray your pizza pan with some cooking spray. Next, break up the sugar cookie dough in the pizza pan and press the dough down evenly in the bottom of the pan to within 1/2 inch of the edge.(Very important notice, if using a pizza stone make sure not to go on the edge or else the dough will melt, fall off edge & could catch oven on fire. Best advice is using a pizza tray.)
Bake the sugar cookie pizza crust for 16 to 20 minutes, or until it’s golden brown. Note: the center will be soft, but don’t worry! It will set while it cools. You will want to cool your sugar cookie crust for about 30 minutes before spreading the frosting over the crust.
While the crust is baking, simply beat the cream cheese, sugar and vanilla with an electric mixer set on medium speed until the mixture look fluffy or smooth. Spread all of the frosting evenly over the cooled crust.
Slice your fruits & top the fruits on top of the frosting of the crust, then brush the fruits with apple jelly & drizzle some raspberry sauce. Then grab a slice & enjoy it!
