This is the type of cheese dip that we all enjoy when we are at a Mexican restaurant or at a party of any type of event.
Now if youre craving for queso chorizo, you can create this recipe without going to a Mexican restaurant! Here is what you will need for this recipe.

Ingredients-
Chorizo-
1-2 tbsp canola oil
1/2 lb mexican style chorizo sausage
1/2 sweet onion minced
1/2 cup jalapenos chopped
1/2 tsp cumin
Queso-
2 cups shredded white cheddar
2 cups shredded pepper jack cheese
2 cups shredded Monterey jack cheese
1 can 12 oz evaporated milk
1/4 tsp onion powder (optional)
1/4 tsp garlic powder (optional)
1 tbsp cornstarch
1/2 tsp salt
Directions-
Queso-
On a medium saucepan over medium-low heat, whisk together evaporated milk, cornstarch, onion powder, garlic powder, & salt combined.
Bring it just to a simmer lightly but don't boil. Stir for 1-2 minutes.
Reduce heat to low & stir in the cheeses & make sure they melt all the way. Sprinkle salt to taste.
Chorizo-
Take the sausage out of the skin & break it apart as much as you can.
Heat a little bit of oil in a medium pan, over medium heat.
Add diced onions, minced jalapenos, & sausage to the pan.
Saute everything mixing & breaking up the clumps of chorizo as much as you can.
Season with cumin & salt, mix it well cook until chorizo is done.
Take off heat & add the chorizo on the queso. And now dip it with some chips!
