Ingredients-
4 Swai fillets
pinch of salt
pinch of pepper
lite sprinkle of garlic powder
couple squirts of lemon juice
Virgin olive oil
Sauce-
2 tbsp unsalted butter
2 tbsp all purpose flour
2 tbsp chopped shallots
1 tsp basil
1/3 sherry wine
2 cups coconut milk
half can tomato paste
1 tbsp chopped tomatoes
1 1/2 tbsp cajun seasoning
salt & pepper to taste
pinch of carved parmesan cheese

Directions-
Cooking-
Take your fish fillets, season them with salt n pepper & garlic powder both sides.
Get your pan on medium-high heat drizzle virgin olive oil & 2 squirts of lemon juice on pan.
Gently place your fish fillets on pan, cook them for 5 minutes or until they're lightly brown on both sides.
Once they're done remove them off the pan gently because the break apart easy, then place them on rack or plate. Optional 2 drips of lemon juice on each fillet to add more flavor.
Sauce-
Melt the butter in saucepan on medium low heat, stir in flour shallots & basil.
Cook & stir for 5 minutes.
Add sherry wine & crabmeat to the flour mixture, gradually add in milk by stirring it constantly.
Stir in cajun seasoning tomato paste & chopped tomatoes.
Simmer on low heat for about 8 to 10 minutes to reduce the alcohol slightly.
Add parmesan cheese & salt n pepper to taste.
